When I saw that this Potato Salad was sans the mayo and instead has organic olive oil I had to give it a shot (mayo and me don't mix). It's got great flavor and texture (surprisingly not mushy) and it's so easy to make. It's really colorful too - peas, shredded cheese, herbs. My boyfriend and I split this salad and a sandwich; perfect trail side lunch. (Posted on 8/7/2013)
