Fragrant Carribean classic done Cuban-style with a sweet and savory blend of coconut milk, black beans, and bananas. Makes two 13 oz. servings. Gluten Free. 17 grams of Protein per Serving. Vegan. We recently switched Coconut Milk Powder. The Coconut Milk Powder in this dish, as well as the Chana Masala, has 2% Non-GMO Tapioca derived from Organically grown Yuca Root. This helps prevent the Coconut Milk Powder from clumping.

    Ingredients: PRECOOKED LONG GRAIN WHITE RICE, BLACK BEANS, BANANAS, ORGANIC EXTRA VIRGIN OLIVE OIL, ONION, SAVORY SOUP BASE (MALTODEXTRIN, SALT, AUTOLYZED YEAST EXTRACT, YEAST EXTRACT, ONION POWDER, SILICON DIOXIDE, TURMERIC EXTRACT (COLOR), SUNFLOWER OIL), GARLIC, COCONUT MILK POWDER (COCONUT MILK AND 2% NON-GMO TAPIOCA DERIVED FROM ORGANICALLY GROWN YUCA ROOT), SALT.

    Allergens: CONTAINS: COCONUT.
Preparation & Storage
    Directions: Remove and discard enclosed oxygen absorber before beginning food preparation. Remove Organic Olive Oil packet and add to other ingredients. Add 2-1/4 cups (540ml) of boiling water. Stir well. Seal and let sit for 15-20 minutes. Stir and serve.

      I thought the bananas were a little odd to add into the mix. Plantains may have been what it was trying to go for? Anyway it fully hydrated and was very filling. It was definitely 2 full servings. Could have used more black beans but I really can't complain. (Posted on 7/25/2015)

      I am celiac and it is very hard to find good quality (and tasty) pre-packaged gluten free meals for camping. I ate the Cuban Coconut Black Beans & Rice while camping and it was soooo good that I took my bag with me on my jaunt up a 14'er. Highly recommend this! (Posted on 6/17/2015)

    3. Worked well with fish Review by Shawn Clark

      Purchased this specifically to serve alongside trout if caught. Ended up placing pan-fried trout fillets (lemon pepper and smoked paprika seasoned) into pouch as the pouch cooked/rehydrated due to timing issues of the meal. The result was excellent as all four participants noted.

      Cooked meal at 9,000+ feet with extra cook time as suggested, and some insulation around the packet to make the rehydration more effective. The mixture of the seasoned trout and this dish worked well together. Also enjoyed the rice/bean remnants separately when the trout was gone.

      My only reason for ranking this a 4 rather than 5 is that I used it to as an augment to fish rather than having it as stand-alone. Therefore, I don't know how much the trout contributed to the flavor of the whole packet.

      Did not have issues with unrehydrated beans or rice. If one is having these problems the issue is likely with the method of keeping the packet insulated/warm while cooking, particularly at high altitude where the boiling water temp is lower and the cook time longer. (Posted on 5/15/2015)

      Just got back from 7 day backpack in the Escalante and this was by far the best dinner of the six I took. The flavors were wonderful together, and I think the small packet of olive oil included really made it taste fresh and almost home made. My husband always eats half of my dinner plus his own and he also thought this was the best of all the dinners we brought. (Posted on 5/15/2015)
